I looove Ramen, but my belly does not. Between the gluten in the noodles, the fatty broth and possible msg its not a food I feel good about eating. Too many belly aches after late night Ramen runs. So naturally I've come up with an uber healthy version that I can eat 5 nights a week if I want.
I make this by the serving so add as much or as little of the ingredients depending on how much you want to eat. This could be easily be a side dish or the main meal.
-Chicken Bone Broth
-Reduced Sodium Fresh Miso Paste
-Soft Boiled Eggs (make in advance or start boiling first)
-Wakame dried seaweed
-Mushrooms or bean sprouts or both
-Any other toppings you like :)
1. Add Bone broth, mushrooms, green onions to pot and bring to a simmer.
2. Put dried seaweed in bowl of water to re-hydrate.
