These build your own Buddha Bowl are great when you're feeding a group or to use as meal prep for the week. That being said buy as much of each ingredient based on your plans for this dish.
-Black Beans Canned or made fresh... you"ll just need a lot more prep time
-Butternut Squash (short cut-Trader Joes has organic pre cut. woot woot)
1. Get rice cooking
2. Prep veggies
3. Get veggies cooking-I like to steam them for this dish, placing the butter nut squash in first to start cooking and adding the broccoli and cauliflower once it starting to get tender.
4. In a small bowl add tahini (amount depends on how much sauce you want... more is always better :). Add juice of 1/2 -1 lemon to tahini and stir stir stir -it should turn into thick paste. Then stir in water in small amounts until you have your desired consistency. Add salt and pepper. Set aside. If sauce thickens up too much just add more water and stir.
5. Heat black beans
6. When everything is ready build your dream bowl and top with sauce and avocado.
